1 pita bread
1 tbsp of ricotta cheese (reduced fat)
½ zucchini, sliced
¼ cup of feta cheese, crumbled
1 tsp of fresh dill, chopped
1 tsp of olive oil
1 pinch of ground black pepper
1. Preheat oven to 180°C / 350°F and line a baking tray with baking paper.
2. Place the pita bread on the baking tray and place in the oven. Cook for a few minutes each side, to make it crispy. Keep a close eye on it as it is easy to overcook it!
3. Take the pita out of the oven and spread the ricotta over evenly. Top with the sliced zucchini, feta and dill. Drizzle over a little oil and season with pepper to taste. Place back into the oven. Cook for 15 minutes or until zucchini is tender and brown on top.
4. Serve and enjoy!
