4 figs, quartered
Large handful of shelled walnuts, broken into small pieces
4 large handfuls of mixed green salad leaves
60g goat’s cheese (or ricotta for a softer flavour)
2 tbsp balsamic vinegar
1 tbsp honey
1. Arrange salad leaves on two large plates.
2. Add the figs, walnuts and goat’s cheese.
3. Mix the honey and balsamic vinegar and divide between the two plates.
4. Serve with a piece of crusty whole grain or spelt bread.
