Homemade fish & chips

This tasty homemade fish and chips recipe provides you with a great balance of protein, fibre, iron and vitamins. 

Ingredients:

2 large cod or haddock fillets (can be fresh or frozen)

1 egg, beaten

2 tbsp flour

2 tbsp cous cous

Salt and pepper to season

2 medium maris piper potatoes

½ tbsp olive oil

1 cup frozen peas

 

Method:

1. Dip one piece of fish in the egg, then into the flour to cover and finally into the cous cous to coat.  Place on a baking sheet and bake in the oven at 180ºC for around 20 minutes (until cooked through).

2. In the meantime, par boil the potatoes for around 8 minutes and then cut into chunky chips. Place on a baking sheet, drizzle with oil and mix well. Cook in the oven for around 15 minutes, turning half way.

3. Serve with peas (blitz in a food processor with a little fresh mint and natural yogurt or crème fraiche for mushy peas!)
