200g halloumi cheese
1 yellow pepper, deseeded
1 red onion
1 tablespoon olive oil
2 tablespoons fresh chopped coriander
1 juice of lime
1 clove of garlic
10 closed cup mushrooms
1 red or yellow bell pepper
1. Wash the vegetables and then cut the cheese, zucchini, pepper and onion into similar bite-sized pieces and half the mushrooms.
2. In a large bowl, mix the oil, coriander, lime and garlic and season with a little salt and pepper. Stir in the cheese, pepper, onion and mushrooms and leave to marinate in the fridge for at least 30 minutes.
3. Thread onto skewers and grill under a medium heat or on the barbeque for around 15 minutes (turning halfway through).
4. Serve with a big green salad and wholemeal pitta or cous cous salad.
