4 tsp jumbo oats
250g Greek yogurt or dairy-free yogurt
400g fresh blackberries
1 sweet apple, peeled and grated
4 tsp caster sugar or Stevia
Cinnamon or ground ginger to taste
1 tsp butter
1. In a frying pan melt the butter and add the oats and cinnamon or ginger. Toast the oats for a couple of minutes and then add half the sugar and coat, stirring frequently. Remove from heat and leave to cool.
2. Mix the yogurt with the blackberries and the rest of the sugar.
3. Pour the oats into a small bowl and in the same pan sauté the apple until softened (adding a little lemon juice if needed). Set aside to cool.
4. In 4 glasses, layer the blackberry yogurt with the apple and then sprinkle the oats on top with a little extra cinnamon or ginger.
