Mango chicken wraps

Not only do herbs such as mint and coriander add flavour to your meals, they are also high in natural anti-oxidants. Anti-oxidants help to fight infections and reduce the signs of ageing. 

Ingredients:

1 large cooked chicken breast, cubed

4 large iceberg lettuce leaves

½ tsp curry powder

2 tbsp natural yoghurt

1 handful mint or coriander, finely chopped

2 wholewheat tortilla wraps

½ mango, peeled and cubed

 

Method:

1. In a large bowl, mix the yoghurt, curry powder and mint or coriander.

2. Add the chicken and mango pieces and mix well.

3. Put two lettuce leaves into each wrap and top with the chicken mix.

4. Wrap and serve!
