6 sheets of filo pastry (defrosted if using ready-made)
8 slices of smoked salmon, cut into small pieces
200g reduced fat crème fraiche or sour cream
Handful of fresh chives, finely chopped
Black pepper to taste
Melted butter for brushing
1. Separate the filo pastry and cut into small squares (approx 2cm by 2cm).
2. Grease a cupcake tray with a little butter and place one filo square in each place. Brush with a little melted butter and cross another filo square on top.
3. Bake in a preheated oven at 200˚C for a few minutes until golden and crisp. Remove and cool.
4. Add a dollop of crème fraiche or sour cream, top with smoked salmon and a sprinkle of chives.
