100g buckwheat flour
1 pinch of salt
50g butter, melted
1. Place flour and salt into a large mixing bowl and add the egg. Add a little milk at a time beating into a smooth batter. Mix well and leave to rest for at least an hour.
2. Stir in the melted butter and then lightly grease a heavy frying pan.
3. Spoon a tablespoon of batter into the pan rolling around until spread evenly. Cook for couple of minutes on both sides at a high heat.
3. Serve with a savoury filling such as egg, feta and spinach, or a sweet filling of greek yogurt and a drizzle of honey.
