1 tin of black beans, drained
3 large tomatoes, finely diced
1 onion, finely diced
3 cloves of garlic, finely chopped
1 tsp dried cumin
1 tsp dried coriander
½ teaspoon chilli powder or flakes
Juice of one orange
Zest of one orange
1 tbsp coconut oil
1 red pepper, finely diced
1 large handful fresh coriander, chopped
1. In a large frying pan or sauce pan, heat the coconut oil and add the garlic and onion. Sauté for a few minutes until soft.
2. Add the spices, tomatoes and pepper and cook over a medium heat for a few minutes, stirring frequently.
3. Next add the beans, the orange zest and juice and salt and pepper to taste. Cook over a low heat for around 10-15 minutes.
4. Just before serving, stir in the fresh coriander. Serve with brown rice or corn tortillas.
